Copycat Erewhon Kale & White Bean Salad
This is my absolute FAVE salad to get at Erewhon but the price…not so much my fave, LOL. I decided that I had to figure out a way to make the famous Erewhon Kale & White Bean Salad at home to not only satisfy my craving, but also my wallet. 🙂 Let’s dive into the deets.
Copycat Erewhon Kale & White Bean Salad
This salad is super simple (one of my favorite things about it), and you don’t need a ton of ingredients either. Here’s what you’ll need…
- Dino Kale: Dino kale is the kale that they use at Erewhon, so it’s our lettuce of choice too! Be sure to remove the stems, dice it finely and give it a nice massage as well (using your hands!)
- Avocado: The avocado adds an amazing flavor to the salad and is a great source of fat to help us absorb the nutrients from the food even better! Not to mention the brain and skin health benefits…
- Sunflower Seeds, Shelled: You can get these in the store or I’ve linked them on amazon too. Be sure to get the shelled ones!
- Dressing: For the dressing, you’ll need a fresh lemon, extra virgin olive oil, dijon mustard and maple syrup (honey works too!)

Copycat Erewhon Kale & White Bean Salad

Ingredients
- 1 head of dino kale, stems removed & massaged
- 1 avocado, diced
- 1 can northern white beans, rinsed & drained
- 1/2 cup sunflower seeds, shelled
- 1 lemon, juiced
- 1/4 cup extra virgin olive oil
- 1 tbsp dijon mustard
- 1 tbsp maple syrup
- Salt & pepper, to taste
Instructions
Time for Erewhon Kale Salad!
- Dice the kale finely, stems removed and massaged.
- Add in the toppings (avocado, white beans, sunflower seeds)
- Whisk all of the dressing together, then dress the salad and mix well with salt and pepper.
- Enjoy!
